Another Indian speciality that you must try is the Lassi, a yoghurt based drink flavoured with spices.
Ingredients for 4 people:
75 cl of yoghurt
1 teaspoon of cardamom
1/2 teaspoon of rose water
50 cl of iced water
120g of Cassonade La Perruche
Grill the cardamom seeds (without adding any oil) for 3 minutes, stirring constantly. Leave them to cool and then crush them into a powder. Pour the yoghurt into a bowl and mix in the sugar until it has dissolved into the yoghurt. Add the ice cold water while stirring with a whisk, then gently beat the mixture until the Lassi reaches a frothy consistency. Add the rose water and the cardamom powder and mix in.
Pour the liquid into glasses containing crushed ice to keep it cold if you are not going to drink it immediately. To prepare your Lassis more quickly, you can put all the ingredients into a mixer and mix until frothy.
